  • 1 cup low sodium tomato juice
  • 1 teaspoon salt
  • 1 cup chopped zucchini

  • Step 1: In a medium saucepan combine the beef broth, carrots, onion, green pepper and celery Bring to a boil

  • Step 2: Stir in the fresh tomato, tomato juice and salt lower heat and simmer for 25 minutes

  • Step 3: Add zucchine and continue simmering for a further 10 minutes or until the veggies are tender. Give the pot a stir a few times, Enjoy
