Step 1: In a food processor or blender combine the egg, garlic, lemon juice and mustard. Blend until smooth. On low speed slowly pour in oil in a fine stream allowing the mixture to emulsify and thicken.
Step 2: Add in salt and pepper to your taste. Transfer to a glass jar. Cover tightly and refrigerate.
