Step 1: Oven ... Preheat the oven to 375 degrees. I use a pizza stone, but you can also do this on a baking sheet. I also always add a sheet of foil on the bottom of the oven, just in case it spills over ... just in case. Better safe than sorry. If using a pizza stone, make sure it is heated at least 20 minutes before using, it needs to heat up to cook properly.
Step 2: Crust ... This is all about easy, so I use a premade crust. This is a NO STRESS easy breakfast for the family. Brush the pizza crust with the olive oil and season with the Italian seasoning. You want a VERY light coating, nothing too heavy.
Step 3: Note: If you want to make individual pizzas; you can use 2-3 small pizzas.
Step 4: Eggs ... In a medium bowl, add the eggs, cream, hot sauce, salt, pepper, cheeses and mix well.
Step 5: Proteins and Vegetables ... Bacon was in the original recipe and is always good, but you can also use sausage, chorizzo, chicken, or ham. Just make sure everything is very fine chopped and pre-cooked. For the vegetables - pretty much anything goes; but, the same rules apply - fine diced and lightly cooked. I pre-cook mine in the microwave for just a minute or two to give them a head start. Peppers (bell peppers any color), but you can also add a few green chilies, cubaneles, or even jalapenos, all very fine diced. Sliced mushrooms, diced onions and roasted red peppers, and chopped olives are my favorites. However, one thing to stay away from are the 'watery' vegetables, such as tomatoes or zucchini, etc. But. Once the eggs are somewhat 'set,' you can add some sliced tomatoes or even zucchini to the top of the pizza which are very good. Just make sure the eggs are slightly set before adding them - otherwise, the crust can become too watery. If you want to go 'all veggie,' just add all veggies in place of the proteins. The basic recipe doesn't change.
Step 6: Once you decide on the proteins and vegetables, add them to the egg and cheese mixture and mix lightly to combine. Slowly pour the mixture on the pizza crust which is either on the pizza stone or a baking sheet. Pour slowly. It should not overflow if you take your time pouring it.
Step 7: Bake ... Middle shelf in the 375 degree oven for 10-15 minutes (mine took 15 minutes), so just check. You want the eggs set and the cheese melted. If you decide to use the smaller individual crusts; just follow pkg directions for cooking times. Usually it is pretty much the same cooking time; but I always check.
Step 8: Serve ... Make sure to let it rest a couple of minutes, and then slice in wedges - just like a pizza. You can serve as is; but if you make your pizza with chorizo and olives you may want to add some green enchilada sauce; or a sausage, peppers and onion pizza may be nice with some salsa; and a chicken and mushroom pizza is delicious served with a little pesto. So have fun. ENJOY! It is also a great way to get kids involved with you in the kitchen. Let them help out.
