Ingredients

The ingredients are:
  • Sandwich Spread/Dip:
  • 2 spinach wraps (but as mentioned, you can use pita bread or a good artisian bread; also crackers or party breads)
  • Greens (spinach, Bibb, baby or micro greens are my favorites)
  • 1 small red onion, very thin sliced
  • Filling:
  • 1 medium-large cucumber (approximately 1 1/4 cups), peeled, lightly seeded and fine chopped
  • 2 to 3 tablespoons black olives, halved
  • 1 scallion, diced fine (white and green parts)
  • 4 ounces Neufachetel cheese (low fat cream cheese)
  • 4 ounces Greek yogurt
  • 1 tablespoon fresh mint, minced
  • 2 tablespoons fresh chives, minced
  • Salt and pepper to taste

How to Make

  • Step 1: Sandwich ... Now, as I said, I love to serve this in a spinach wrap - my favorite; but pita bread, even a good artisian bread; or for appetizers ... use your favorite crackers or those 'cute' party breads. It really depends on how you like to serve this. It is a very versatile recipe.

  • Step 2: Cucumber ... This recipe is very forgiving. So, you can add a bit more or less cucumber if you want. Once you peel, seeded, and chop the cucumber, add do a plate lined with a paper towel to lightly drain and dry. Just 5 minutes is all it takes.

  • Step 3: Spread ... Add the olives, cream cheese, yogurt, mint, chives, salt, and pepper to a small bowl and mix well. Then add in the cucumber and toss to combine.

  • Step 4: Sandwich or Dip ... As an appetizer - simple transfer to a serving bowl and serve with your favorite crackers; or spread on small party breads and cut in half to serve as finger food. For my favorite way to serve this - spread on a spinach tortilla wrap and top with spinach leaves and red onion. Roll up and cut in half. I like to microwave the wrap 5-10 seconds on medium heat to warm up so it is plyable. If you don't want to use a wrap, pita bread, or a good artisian style bread works just as well. ENJOY!
