Ingredients

The ingredients are:
  • 1/2 cup mashed over-ripe bananas
  • 1/2 cup brown sugar
  • 1/4 cup butter, softened
  • 1/4 cup granulated sugar ( I use Sun Crystals which is half sugar and half stevia)
  • 1 teaspoon vanilla extract
  • 1/4 cup liquid egg substitute or 1 large egg
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 cups old fashioned oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup walnut pieces

How to Make

  • Step 1: Heat oven to 350F.

  • Step 2: Combine banana, butter, sugars, and vanilla in a large mixing bowl. Beat at medium speed until smooth. Add egg. Beat well.

  • Step 3: Combine flour oats, baking soda, and salt in a medium bowl. Stir with a whisk.

  • Step 4: Add flour mixture to banana mixture. Beat at medium speed until well blended.

  • Step 5: Stir in chocolate chips and walnuts. Refrigerate dough 10-15 minutes (optional).

  • Step 6: Spray baking sheets. Drop batter by heaping tablespoonfuls 2" apart onto a baking sheet. The cookies don't spread much when baking so you can fit a lot of cookies on the baking sheet.

  • Step 7: Bake at 350 for 12 minutes or until golden brown. Cool on cookie sheet 2 minutes, then cool on wire racks.
