Step 1: Try to choose oranges that have the thinnest skin. If the orange is super large, double the amount of water and sugar. Wash the orange thoroughly and cut off both ends.
Step 2: Carefully zest the orange with a citrus zester, being careful not to cut into the white pith. Cut the zest into 1 inch pieces. Then peel the orange and the white pith off the orange flesh and discard the pith. Then section the orange up.
Step 3: Place orange sections in a food processor and pulse to break down, but not completely liquify. Leave it slightly chunky.
Step 4: Pour orange, zest, water and sugar in a medium saucepan. Bring to a gentle boil. Boil gently for 15 minutes, stirring occasionally. Then cool completely. Pour in a clean, glass jar with a tight fitting lid. Store in refrigerator. Eat on fresh biscuits, toasted english muffins, or use in your favorite recipes.
