Ingredients

The ingredients are:
  • 1 pound dry pasta (of your choice)
  • 8 ounces reduced-fat cream cheese
  • 2 tablespoons oil (extra virgin olive oil)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 to 4 tablespoons fresh thyme leaves (depending on your taste)
  • Grated cheese (of your choice to top)

How to Make

  • Step 1: Cook pasta in boiling salted water.

  • Step 2: Warm cheese, lemon juice and oil in large saucepan over low heat; stirring occasionally.

  • Step 3: Add fresh thyme and stir; set aside.

  • Step 4: Drain cooked pasta, reserving 1 cup (or more if needed )cooking water.

  • Step 5: Stir reserved cooking water into cream cheese mixture.

  • Step 6: Add pasta and lemon zest, toss to coat adding more cooking water if necessary.

  • Step 7: Season with salt and pepper if desired; top with a grating of Asiago or Parmesan.
