  • 1 cup all purpose flour
  • 1 cup quick-cooking oats
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 to 1 teaspoon cinnamon
  • 2 egg whites (from large eggs)
  • 1/3 cup corn syrup, light or dark
  • 1 1/2 to 2 teaspoons vanilla extract
  • 1/2 cup raisins or Craisens

How to Make

  • Step 1: Spray cookie sheets generously with cooking spray. In a large bowl, combine dry ingredients. Stir in egg whites, corn syrup, and vanilla until well mixed

  • Step 2: Add raisins. (Batter will be stiff.) Drop by rounded teaspoonfuls onto prepared cookie sheets.

  • Step 3: Bake in 375 degrees F oven for 8-10 minutes, or until firm. (Do not overbake.) Remove; cool on wire rack.
