Ingredients

The ingredients are:
  • 1 pound dry penne pasta
  • 1 pound ground sausage (Italian sausage)
  • 1 medium onion, chopped
  • 2 large garlic cloves, crushed
  • 8 ounces fresh mushrooms
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons Italian seasoning mix
  • 1 can (14 1/2 ounce) diced tomatoes (Italian style diced tomatoes)
  • 2 cans (14.5 ounces each) crushed tomatoes
  • 3 cups fresh spinach leaves (loosely packed, roughly chopped)
  • 8 ounces mozzarella cheese, cubed
  • 1 cup parmesan cheese, grated (divided)

How to Make

  • Step 1: Preheat oven to 425 degrees.

  • Step 2: Prepare pasta as directed on package until al dente, about 8 minutes. Drain and return to the pan.

  • Step 3: While pasta is cooking, heat large skillet, add sausage, onion, and garlic. Saute' until sausage is cooked through. Drain off any grease. Add mushrooms and saute' 3 minutes. Add pepper, italian seasoning and tomatoes to pan. Simmer, stirring occassionally, about 8 minutes.

  • Step 4: Combine sausage mixture to pasta, spinach, mozzarella cheese and 1/3 cup of parmesan cheese.

  • Step 5: Pour into 13x9 glass baking dish. Top casserole with remaining 2/3 cup parmesan cheese.

  • Step 6: Bake uncovered 15 minutes or until cheese is melted and sauce is bubbling.
