Step 1: After seeding and chopping the diced cucumber pat dry using paper towels to remove as much moisture as possible (THIS IS IMPORTANT!).
Step 2: In a small bowlcombine the first 8 ingredients; beat until blended. Stir in the diced cucumbers, red pepper, onion, olives and parsley. Adjust salt and pepper if neededf. Cover and refrigerate for up to 2 hours
Step 3: Remove crusts from bread; cut each slice into four triangles. Spread with cream cheese mixture. Garnish with cucumber slices and dill sprigs if desired. Yield: 4 dozen.
