Ingredients

The ingredients are:
  • 1 (8 ounce) package cream cheese, softened
  • 1/3 cup mayonnaise
  • 1 tablespoon snipped fresh dill
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 to 1/2 teaspoon seasoned salt, or to taste
  • 1/2 teaspoon fresh ground black pepper, or to taste
  • 1/8 teaspoon cayenne pepper
  • 2 large cucumbers, peeled, halved, seeded then finely diced
  • 1/2 cup chopped sweet red pepper
  • 1/4 cup chopped onion or 2 green onions, minced
  • 1/4 cup pimiento-stuffed olives, chopped
  • 1/4 cup minced fresh parsley
  • 12 slices whole wheat bread
  • Cucumber slices and fresh dill sprigs, optional

How to Make

  • Step 1: After seeding and chopping the diced cucumber pat dry using paper towels to remove as much moisture as possible (THIS IS IMPORTANT!).

  • Step 2: In a small bowlcombine the first 8 ingredients; beat until blended. Stir in the diced cucumbers, red pepper, onion, olives and parsley. Adjust salt and pepper if neededf. Cover and refrigerate for up to 2 hours

  • Step 3: Remove crusts from bread; cut each slice into four triangles. Spread with cream cheese mixture. Garnish with cucumber slices and dill sprigs if desired. Yield: 4 dozen.
