Ingredients

The ingredients are:
  • 1 pound fish fillets (I used Tilapia, Grouper, Snapper or any meaty fish)
  • Zest & juice 1 1/2 large lemons (slice the remaining 1/2 lemon in small wedges)
  • 5 garlic cloves, minced
  • 1/2 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons lemon pepper
  • Dash cayenne pepper (optional)

How to Make

  • Step 1: In a large ziplock bag, add the lemon juice, minced garlic, salt, lemon pepper, olive oil, garlic powder and cayenne. Mix well.

  • Step 2: Add the fish to the ziplock bag and move it around, being sure to coat it with the marinade. Allow to sit for 2 hours - no more than 2 hours though or the acid in the lemon will effect the fish texture.

  • Step 3: Pre-heat grill to medium-high heat. Season the fish with more salt and lemon pepper. I use a fish grilling basket when I make this or any fish on the grill if you don't have a basket spray the grates thoroughly with non-stick cooking spray and then place the fish onto the grill. Cook for about 3-4 minutes on each side (may be more or less depending on the thickness of the fish, fish doesn't tak very long to cook be sure not to over-cook it because it will dry out quickly, keep a close eye on it, as soon as it is opaque in the middle take it off the heat right away.

  • Step 4: Squeeze remaining lemon wedges over the fish before eating.
