Step 1: For peach filling: combine peaches, lemon juice, flour, brown sugar, salt, cinnamon, and vanilla in a large bowl. Allow to rest while making crumble.
Step 2: For crumble: combine cold butter cubes, egg, flour, sugar, baking powder, and salt in a food processor; process until very crumbly (no larger than peas). Divide crumble in half.
Step 3: Press one half into the bottom of a 11x7 inch baking dish (or a 13x9 inch baking dish, it might seem like there’s not enough crumble for the 13x9 don’t worry, just keep pressing with your fingertips). Pour peach filling into the pan over bottom crumble. Sprinkle remaining crumble over top.
Step 4: Bake at 350 degrees for 40-45 minutes or until golden brown. Allow to cool before slicing.
