Ingredients

The ingredients are:
  • 8 ounces dry rice noodles (uncooked)
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons cornstarch
  • 3 garlic cloves, minced
  • 1 to 1 1/4 pounds boneless skinless chicken breasts (or thighs, 4 breasts, cubed into bite size pieces)
  • 1 tablespoon oil (peanut oil)
  • 1 tablespoon sesame oil
  • Salt and pepper
  • 6 green onions (cut into 2-inch pieces)
  • 150 grams unsalted cashew nuts (1 cup)
  • 2 tablespoons chili sauce (sweet)

How to Make

  • Step 1: Cook the rice noodles according to directions on the package.

  • Step 2: Meanwhile in a small bowl combine soy sauce, cornstarch and garlic; mix in the chicken and coat in the mixture.

  • Step 3: In a large skillet saute the chicken mixture in the peanut oil and the sesame oil until no longer pink.

  • Step 4: Add in green onions; cook 1 minute longer. Season with salt and pepper.

  • Step 5: Drain noodles; stir into the skillet. Add cashews and chili sauce, then heat though.
