Step 1: Cook the rice noodles according to directions on the package.
Step 2: Meanwhile in a small bowl combine soy sauce, cornstarch and garlic; mix in the chicken and coat in the mixture.
Step 3: In a large skillet saute the chicken mixture in the peanut oil and the sesame oil until no longer pink.
Step 4: Add in green onions; cook 1 minute longer. Season with salt and pepper.
Step 5: Drain noodles; stir into the skillet. Add cashews and chili sauce, then heat though.
