Ingredients

The ingredients are:
  • 4 boneless skinless chicken breasts (pounded thin)
  • 1 cup dry bread crumbs
  • 2 teaspoons dried oregano or 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large eggs
  • 2 tablespoons water
  • 1/2 cup all-purpose flour
  • 1 1/2 cups part-skim mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, shredded
  • Pasta sauce (use whatever kind you like)
  • Cooked angel hair pasta

How to Make

  • Step 1: In a shallow bowl, combine the bread crumbs, oregano or basil, salt and pepper. In a separate shallow bowl, whisk eggs and water. Place flour in another shallow bowl. Coat chicken with flour, then dip in egg mixture and coat with bread crumb mixture.

  • Step 2: In a large skillet, cook chicken in oil in batches for 4-6 minutes on each side or until juices run clear. Spoon pasta sauce over chicken; sprinkle with Mozzarella cheese and allow to melt then with Parmesan cheese.

  • Step 3: Serve with hot cooked pasta.
