The ingredients are:
  • 1 cup chopped pecans
  • 1/2 cup flaked coconut
  • 1/4 cup butter, melted
  • 4 ounces cream cheese, softened
  • 1/4 to 1/3 cup confectioners' sugar
  • 2 cups whipped topping (Cool Whip)
  • 1 (9 inch) pastry shell, baked and cooled
  • 1/3 to 1/2 cup caramel ice cream topping (Smucker's)

How to Make

  • Step 1: In a bowl combine pecans, coconut and melted butter. Pour onto an ungreased baking pan. Bake 350 degrees for 5-10 minutes or until golden brown, stirring a few times. Cool completely.

  • Step 2: In a mixing bowl with an electric mixer beat the cream cheese and confectioners sugar until smooth. Fold in whipped topping. Spoon into pastry shell. Sprinkle with coconut mixture. Drizzle with caramel topping. Refrigerate for 3 hours before serving.
