Ingredients

The ingredients are:
  • 8 ounces uncooked angel hair (reserve water from cooking)
  • 1 cup chopped cooked ham
  • 8 oz. mushrooms, sliced
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1/2 tseaspoon salt
  • 2 eggs, lightly beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper

How to Make

  • Step 1: Cook pasta according to package directions, drain but reserve cooking water.

  • Step 2: In a large nonstick skillet, saute mushrooms in 2 teaspoons olive oil, add the ham and continue cooking until thoroughly heated. Add pasta, stir well to combine. (At this point you may wish to add a little pasta cooking water just to keep the pasta/ham mixture from drying out.)

  • Step 3: Combine cheese, sour cream, egg, and garlic powder, stirring with a whisk. Add approximately 1/2 cup of the reserved pasta liquid to egg, again stirring with a whisk.

  • Step 4: Pour egg mixture over pasta mixture, stir well. Cook over low heat for 5 minutes, or until sauce thickens, stirring constantly. Do not boil! Sprinkle with pepper and more parmesan cheese if desired.
