The ingredients are:
  • 1 pound cooked shrimp (shelled, deveined, and rough chopped)
  • 1/2 cup cucumber, diced (peeled)
  • 1/2 cup celery, sliced
  • 2 green onions, with tops, thin sliced
  • 1 can (8 ounce) sliced water chestnuts (chopped)
  • 1/4 cup fresh dill (or 2 teaspoons dried)
  • 1/2 cup olive oil mayonnaise
  • 3 tablespoons low-fat sour cream
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon sea salt

How to Make

  • Step 1: Combine shrimp, cucumber, celery, green onion, water chestnuts and dill in a bowl.

  • Step 3: Add dressing to shrimp mixture, stirring well to coat.

  • Step 4: Cover and refrigerate at least three hours before serving.
