Ingredients

The ingredients are:
  • POLYNESIAN SAUCE
  • 3/4 cup California French dressing (Publix, or a similar non creamy French dressing)
  • 5 tablespoons honey
  • Pinch garlic powder
  • 2 teaspoons apple cider vinegar
  • CHICKEN TENDERS
  • 1 3/4 pounds chicken tenders
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/2 to 1 teaspoon black pepper
  • 1/4 to 1/2 teaspoon cayenne
  • 1 cup low-fat buttermilk
  • 1 1/4 cups panko breadcrumbs
  • 1 1/4 cup cashews (chopped finely in processor)

How to Make

  • Step 1: For the Polynesian Sauce: Whisk together ingredients and set aside and chill until ready to use.

  • Step 2: For the Chicken Tenders: Preheat oven to 400º. Take a rimmed baking sheet and set a cookie cooling rack inside of it. Spray with non-stick spray. Set up an assembly line of 3 baking dishes.

  • Step 3: In the first dish, mix together flour, salt, garlic powder, onion powder black pepper, and cayenne. In the second dish, pour the buttermilk. Finally, in the third dish, mix together the Panko and the cashew crumbs.

  • Step 4: A few chicken tenders at a time, dredge into the flour and shake off excess. Next, dunk into the buttermilk followed by rolling them in the Panko cashew mixture. Place on prepared baking sheet (on the cooling rack). Repeat with remaining chicken tenders.

  • Step 5: Place in oven and bake for 20-22 minutes.
