Step 1: Slice each chicken thigh into 8 pieces.
Step 2: Heat oil in a skillet over medium heat. Add in chicken and onions. Cook stirring for 5-7 minutes or until chicken is no longer pink inside, adding in the garlic and seasoning with salt and pepper the last 1-2 minutes of cooking time.
Step 3: In a bowl, combine all sauce ingredients and stir until blended. Cover and refrigerate until needed.
Step 4: Warm pita breads in the microwave for 10 seconds. Open pita breads to make pockets. Put 1/4 of the chicken mixture into each pocket and top with tomato, cucumber and sauce. Serve immediately.
