Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons oil
  • 2 garlic cloves, minced
  • 1 small red onion, chopped
  • 2 Roma tomatoes, finely chopped
  • 1 English cucumber, diced
  • 2 pitas breads, cut in half
  • Sauce:
  • 3 tablespoons mayonnaise
  • 3/4 cup plain Greek yogurt
  • 1 teaspoon dried dill
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • Hot pepper sauce, to taste
  • Salt and fresh ground black pepper, to taste

How to Make

  • Step 1: Slice each chicken thigh into 8 pieces.

  • Step 2: Heat oil in a skillet over medium heat. Add in chicken and onions. Cook stirring for 5-7 minutes or until chicken is no longer pink inside, adding in the garlic and seasoning with salt and pepper the last 1-2 minutes of cooking time.

  • Step 3: In a bowl, combine all sauce ingredients and stir until blended. Cover and refrigerate until needed.

  • Step 4: Warm pita breads in the microwave for 10 seconds. Open pita breads to make pockets. Put 1/4 of the chicken mixture into each pocket and top with tomato, cucumber and sauce. Serve immediately.
