Ingredients

The ingredients are:
  • 2 boneless/skinless chicken breasts (or boneless/skinless thighs)
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch dried ground thyme
  • Pinch dried rosemary (ground in spice mill)
  • Pinch cayenne pepper
  • 1 tablespoon less sodium soy sauce
  • 1/4 cup chicken broth
  • 1 garlic clove, minced
  • 1/3 cup orange marmalade

How to Make

  • Step 1: Place chicken breasts in a zip lock bag and pound out till thickness is even throughout. Heat olive oil in skillet on medium heat.

  • Step 2: Mix spices and sprinkle on chicken breasts (or thighs) and brown in skillet on each side.

  • Step 3: In a bowl, mix the rest of the ingredients and when you turn the chicken over to brown on second side, pour sauce mixture over it. Let simmer on med/low heat for 15 to 20 minutes. Turn chicken once in the sauce. Allow sauce to reduce down to about 1/2. Spoon sauce over chicken and serve hot.
