Ingredients

The ingredients are:
  • 1 pound lentils, rinsed and drained
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 cup diced carrot
  • 3 cloves garlic, coarsely chopped
  • 12 ounces smoked sausage
  • 6 cups chicken broth
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 2 cups chopped fresh spinach or chard
  • 2 tablespoons fresh lemon juice
  • Salt & ground pepper, to you taste

How to Make

  • Step 1: Combine all ingredients, except salt, in a 5 to 7-quart slow cooker. Cover and cook on LOW for 6 to 8 hours, until lentils are tender.

  • Step 2: If desired, blend 3 to 4 cups of this, about 1 cup at a time, to make a thicker soup. Or use an immersion blender and blend until you reach the consistency you desire
