Ingredients

The ingredients are:
  • 2 tablespoon oil (I use Canola)
  • 1 teaspoon cumin seeds
  • 1 tablespoon coriander seeds (grind using a mortar and pestle or do as I do designate a coffee grinder)
  • 1 teaspoon cumin powder (or to taste)
  • 1 teaspoon cayenne pepper (or to taste)
  • 1/2 teaspoon turmeric
  • 1 chicken breast, cooked (cut into desired pieces, I use 2 chicken breasts)
  • 1 large red onion chopped
  • 2 large cloves garlic diced ( I shred with medium grater)
  • 1 piece (1 inch) gingerroot (peeled and diced, I shred with medium grater)
  • 1 red pepper sliced or chopped ( I use a red bell pepper)
  • 1 long red sweet pepper, sliced
  • 1 green chili pepper, seeded and diced
  • 1 can (14 ounce) diced tomatoes ( I like using the 28 ounce can)
  • 1 can (24 ounce) red beans (or vegetable of your choice)
  • 1 tablespoon brown sugar
  • 1 can (14 ounce) coconut milk
  • 1/2 teaspoon sea salt (optional or to taste)
  • 1/2 teaspoon freshly ground black pepper (optional or to taste)
  • 2 tablespoons fresh chopped cilantro for garnish ( I use the cilantro halved with parsley)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Measure out the cumin seed in small bowl, grind and add the coriander seeds

  • Step 2: In another little bowl measure in the cumin powder,cayenne,and turmeric

  • Step 3: Prep the chicken and vegetables

  • Step 4: Heat oil in pan until hot, add and brown the cumin and coriander seeds

  • Step 5: Add the chicken, onion, garlic and ginger and spices stir well, add in the peppers cooking all until onions are soft and translucent

  • Step 6: Add tomatoes, beans and brown sugar simmer and stir occasionally for 10 minutes, more if you want the sauce thicker. Should your mixture get too thick you may add some water

  • Step 7: Add salt and pepper if using, stir in coconut milk and heat through

  • Step 8: Garnish with chopped cilantro or a mixture I like to use cilantro and parsley or green onions. Serve over Basmati rice
