Ingredients

The ingredients are:
  • 2 cups mango, small diced
  • 1 cup avocado, small diced (firm, not overly ripe)
  • 4 scallions, fine diced (white and green parts)
  • 1/2 to 3/4 teaspoon chili sauce (found in most grocery stores in the Asian aisle)
  • 4 teaspoons fresh lime juice
  • 4 teaspoons cilantro, minced
  • 3/4 teaspoon fresh ginger, grated (1/4 teaspoon ground ginger can be substituted)
  • Salt and pepper to taste

How to Make

  • Step 1: Topping ... Mix the scallions, chili sauce, lime juice, ginger (grate it over the bowl to get all the juice), cilantro, salt, and pepper together in a bowl. Then add the mango and avocado and mix well; but try not to mash up the avocado too much. It is important to purchase a firm avocado so it doesn't fall apart. Season lightly with salt and pepper. Cover well and refrigerate at least 1 hour before serving. I like to put 1 piece of plastic wrap directly on the fruit and then another piece over the top.

  • Step 2: Serve ... As I said - Endless ideas. It is excellent over grilled salmon, swordfish, scallops, shrimp, chicken breasts, or pork tenderloin; but this is equally good over a bed of fresh greens and your favorite salad toppings. Or in any of your favorite Mexican dishes; such as, fish or chicken tacos, tostados, tortilla bowls, quesadillas, etc. ENJOY!
