Ingredients

The ingredients are:
  • 2 large onions, fine diced (I use a yellow onion)
  • 2 medium celery ribs, fine diced
  • 1/2 small red bell pepper, fine diced
  • 1/2 small green bell pepper, fine diced
  • 1/2 teaspoon Italian seasoning (optional)

How to Make

  • Step 1: Note: You can use a mix of red, green, yellow, and orange peppers. Use what your local market has on sale.

  • Step 2: Dice all your vegetables very fine (approximately the same size), then lay flat on a baking sheet lined with parchment paper, cover with saran wrap and freeze. Once frozen, you can add the seasoning; or you can leave it plain. I usually transfer to 2 ziploc bags; 1 seasoned, and 1 not. You can also use a vacuum sealed bag or even a tupperware type of container. They will last a good 3-4 months. Mine never lasts that long. ENJOY!
