Ingredients

The ingredients are:
  • 1 1/2 cups hummus
  • 1 French bread loaf (unsliced, around 15 inches long, or any European-style unsliced bread
  • 2 roasted red pepper, sliced (store jarred will work)
  • 1/2 medium cucumber, thinly sliced
  • 1/2 medium red onion, thinly sliced
  • 2 tomatoes, thin sliced
  • Crumbled feta cheese, as much as you like to use
  • 1/3 cup Greek salad dressing (can use more but 1/3 cup should be plenty)
  • 4 romaine lettuce leaves
  • Kalamata olives (or other brined olives)

How to Make

  • Step 1: Slice bread in half lengthwise. Spread bottom half of bread with hummus.

  • Step 2: Layer with roasted peppers, cucumber, onion, and tomatoes and sprinkle with feta cheese. LIGHTLY drizzle Greek dressing over the top, then top with romaine lettuce. Top with other half of bread. .

  • Step 3: Cut sandwich into 4 equal pieces. Garnish with kalamata olives.
