  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small onion, chopped
  • 2 garlic cloves, finely minced
  • 3 tablespoons butter
  • 1/2 pound lump crab meat, picked over
  • 2 tablespoons fresh lemon juice
  • 1 hard-boiled egg, chopped
  • 1 teaspoon worcestershire sauce
  • 3 tablespoons mayonnaise, or as desired
  • 1 teaspoon Dijon mustard
  • Salt and pepper
  • 2 English muffins, sliced in half, lightly buttered then toasted
  • 8 tablespoons Parmesan cheese

How to Make

  • Step 1: N a large frying pan cook bell peppers, onion, and garlic in the butter over medium low heat, stirring, until the vegetables are softened. Remove from heat (about 3 minutes)

  • Step 2: Stir in the crab meat, lemon juice, egg, Worcestershire sauce, mayonnaise, and mustard, gently mixing well. Season with salt and pepper.

  • Step 3: Divide the crab-meat mixture among the muffin halves, mounding it slightly. Sprinkle each top of sandwiche with 2 tablespoons Parmesan cheese and broil for 3 to 4 minutes or until the tops are golden.
