Ingredients

The ingredients are:
  • Salad:
  • 2 cups mushrooms (use a mix of your favorite mushrooms), thin sliced
  • 2 cups cucumber (seedless if possible), peeled and cut in half moons
  • 1 cup celery, thin sliced on an angle (make sure to add the celery leaves)
  • 1/2 cup red onion, cut in quarters and very thin sliced
  • Dressing:
  • 3 teaspoons olive oil
  • 1/3 cup sherry vinegar
  • 2 teaspoons Dijon mustard
  • 1 small garlic clove, fine minced
  • 1/4 teaspoon dried oregano
  • Pinch red pepper flakes
  • 1/2 teaspoon kosher salt
  • Pepper to taste
  • Garnish: fresh parsley, minced

How to Make

  • Step 1: Dressing ... Add everything to a measuring cup and whisk well. Add most of the dressing to a large bowl. I like to save a little of the dressing as the mushrooms will continue to soak up the dressing as it marinates. You can add the remaining dressing right before serving.

  • Step 2: Salad ... Add all the salad ingredients to the bowl with the dressing and toss to combine. Make sure everything is coated well with the dressing. Cover with plastic wrap and refrigerate 2-4 hours before serving.

  • Step 3: Serve ... Right before serving add the remaining dressing, garnish with fresh parsley if desired, and ENJOY! This salad is great cold or even at room temperature.
