  • The following recipe serves 16-24 people.

Ingredients

The ingredients are:
  • 1 pound sour cream
  • 2 scallions, fine diced (white and green parts)
  • 2 tablespoons garlic, fine minced (then made to a paste, see Note)
  • 3 jalapeno peppers (fine minced (ribs and seeds removed; leave a few ribs or seeds in if you want a bit more heat)
  • 1 to 2 tablespoons fresh mint, fine minced (use as much as you like to taste)
  • 1 to 2 tablespoons fresh cilantro, fine minced (use as much as you like to taste)
  • 3 to 4 tablespoons brown sugar (I start with 3)
  • 4 tablespoons fresh lime juice
  • Paprika, 1 pinch
  • Salt, to taste

How to Make

  • NOTE ... Mince the garlic fine (on the cutting board) and then take a pinch of salt and add to the garlic. Press and rub the knife over the garlic to make it into a paste

  • Step 1: Sauce ... Add all the ingredients to a small bowl and mix well. As I mentioned, start with 3 tablespoons of the brown sugar, then taste, you can always add more. Check to see if it needs any salt or any more brown sugar - it is a sweet and spicy sauce, so adjust accordingly.

  • Step 2: Serve ... Make sure to chill at least 30 minutes before serving.
