Ingredients

The ingredients are:
  • 1 medium red pepper, chopped
  • 1 medium green pepper, chopped
  • 2 tablespoon oil
  • 8 slices French bread
  • Mayonnaise
  • 2 cups salsa, well drained (drain in a colander)
  • 1 cup shredded Mexican cheese blend, divided (using about 1/4 cup for each sandwich but you can use more)
  • Butter, softened

How to Make

  • Step 1: In a small skillet, saute peppers in oil until tender. Spread four bread slices with mayonnaise. Layer with peppers, salsa and cheese. Top with remaining bread. Butter outsides of sandwiches lightly with soft butter.

  • Step 2: In a small skillet over medium heat, toast sandwiches for 2-4 minutes on each side or until cheese is melted.
