Ingredients

The ingredients are:
  • 2 cups cottage cheese (full-fat)
  • 2 cups Monterey Jack cheese, shredded
  • 2 cups cheddar cheese, shredded
  • 4 large eggs, lightly beaten
  • 3 tablespoons butter, melted
  • 1 can (4 ounce) green chilies, chopped
  • 2 to 3 tablespoons olives, chopped (ripe olives, green or black)
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt (I use seasoning salt)
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/2 to 3/4 Picante sauce (or thick salsa, medium heat)

How to Make

  • Step 1: In a large bowl, combine the first seven ingredients. In another small bowl combine flour, baking powder and salt, pepper and garlic powder; add to the cheese mixture and mix well. Transfer to a greased 9-in. pie plate.

  • Step 2: Preheat oven for 10 minutes to 375 degrees. Bake for 15 minutes. Reduce heat to 350° and bake 20. Remove top with Picante sauce return and bake another 10 minutes longer or until a knife inserted near the center comes out.
