Ingredients

The ingredients are:
  • 1/2 pound Chorizo or ground turkey sausage, cooked and crumbled
  • 8 eggs, scrambled (cooked)
  • 1/2 cup cooked or canned black beans
  • 1 envelope low-sodium taco seasoning mix
  • 2 cups shredded Kraft Mexican cheese mix, divided
  • 6 (8-10 inch size) whole wheat burrito shells
  • 1 cup salsa
  • 1/2 cup Velveet cheese cheese, diced
  • Garnish:
  • 1 cup shredded lettuce
  • 1 tomato, diced
  • 1 cup guacamole
  • Sliced black olives
  • Shredded cheese
  • Additional salsa

How to Make

  • Step 1: In a large bowl; combine the cooked chorizo with the taco seasoning mix. Mix in 1 cup of the Mexican shredded cheese and the black beans. Add cooked scrambled eggs to the mixture in the bowl. Mix gently so the eggs are not broken up too much.

  • Step 2: Divide meat/egg mixture evenly between the flour tortillas. Divide remaining 1 cup Mexican cheese onto the meat/egg mixture. Roll them up and place them in a microwave safe baking dish, seam side down.

  • Step 3: In a small bowl mix the salsa and Velveeta cubes; microwave on medium-high until the cheese is melted. Remove from microwave and mix well.

  • Step 4: Pour the salsa and cheese over the burritos. Sprinkle the remaining shredded cheese over the sauce. Microwave on Medium High power until the cheese on top is just melted. Serve with one or all of the listed garnish.
