Ingredients

The ingredients are:
  • 3 pounds new baby red potatoes, well washed and scrubbed, leave the skin on
  • 1 large garlic bulbs, separated into cloves, skins removed from cloves
  • 1/3 cup olive oil or more (don't be stingy with the olive oil!)
  • 3 tablespoons roughly chopped rosemary leaves
  • Pinch cayenne pepper
  • Salt and freshly ground black pepper, to taste

How to Make

  • Step 1: Preheat the oven to 400 degrees F. Grease a medium baking sheet. Dry all potatoes well after washing with paper towels.

  • Step 2: In a large bowl toss the potatoes with the garlic, olive oil, rosemary, cayenne and salt and pepper, to taste. Roast for 35 minutes until golden and crisp, stirring once halfway through cooking process. Transfer to a serving bowl and serve.
