Ingredients

The ingredients are:
  • CORN
  • 8 to 12 corn ears
  • Herb parmesan parsley mayonnaise (sauce no. 1):
  • 1 cup mayonnaise (low fat doesn't work well)
  • 2 cups parmesan cheese, grated
  • 2 tablespoons parsley, fine chopped
  • 2 teaspoons fresh chives, fine chopped
  • 1 teaspoon chili powder (optional)
  • Salt and pepper to taste
  • Blue Cheese Butter (sauce no. 2):
  • 1 stick butter, softened
  • 1/4 cup blue cheese, crumbled (gorgonzola is a nice substitute)
  • 1 shallot, grated
  • Dash of hot sauce
  • Salt and pepper to taste
  • Green Chili Cheese Butter (sauce no. 3):
  • 1/2 cup butter, softened
  • 1 (4 ounce) can green chilies, fine chopped
  • 3 tablespoons cotija cheese, crumbled
  • 1 garlic clove, minced
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste
  • Chipotle Butter (sauce no. 4):
  • 1 stick butter, softened
  • 2 teaspoons honey
  • 1 teaspoon chipotles, in adobo sauce (more or less to taste), fine minced
  • 1 teaspoon lime juice
  • Salt and pepper to taste

How to Make

  • Step 1: Corn ... Cook the corn according to any method you prefer. Butters ... Make sure the butter is unsalted and softened. Using unsalted butter allows you to control the amount of salt. For that using mayonnaise, obviously that doesn't apply. Add all the other ingredients and mix well. I always add a little salt and pepper to the butter, but I go lightly. Those with cheese already have salt, so I tend to season lightly. You can always put the salt and pepper shaker on the table for those who like more. Refrigerate until ready to use. Preparing these a few hours before will allow all the flavors to develop.

  • Step 2: Serve ... Make sure to take the toppings with butter out to slightly soften. Then, cook up that corn and slather on the toppings. The topping are best served when the corn is hot. ENJOY!
