Step 1: If using stone ground grits, place them in a bowl and cover with water, stir.
Step 2: Pour off water and light bran which has floated to the top.
Step 3: Place grits in sauce pot. Add water, salt, and margarine. Bring to a boil and reduce heat to low.
Step 4: Cook, covered, for 20-30 minutes, or until creamy.
Step 5: Add Half and Half and cheese, and stir until cheese melts. Serve hot.
