Ingredients

The ingredients are:
  • 4 large eggs
  • 4 medium tomatoes
  • 1/4 cup cheese, grated (I like Mexican blend, but you can use whatever you like. Parmesan is good too)
  • 2 tablespoons bacon, cooked and crumbled (you can fry your own or get it already made and ready to go in the jar)
  • Pinch of parsley
  • Salt and pepper, to taste

How to Make

  • Step 1: Slice the tops off of the tomatoes, then scoop out the insides and discard.

  • Step 2: Divide the grated cheese and bacon between the 4 tomatoes, and spoon into the tomatoes.

  • Step 3: Crack an egg into each tomato, then top with parsley, salt and pepper.

  • Step 4: Set in a shallow pan, and bake at 425 degrees F, for 20-35 minutes, depending on how you like the yolk.
