Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 2 cups brown sugar
  • 1/4 teaspoon salt
  • 2 (14 ounce) cans coconut milk, combined with 3 cups water (I use Thai Kitchen brand)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: In a large bowl, combine dry ingredients then very slowly add coconut milk, mixing as it is added.

  • Step 3: Pour into a greased or sprayed 8 inch baking dish, and bake for 1 1/2 hours. Center will still be jiggly when done.

  • Step 4: Serve with Vanilla ice cream on top.
