Ingredients

The ingredients are:
  • Meatloaf:
  • 2 pounds ground beef
  • 1/2 pound ground pork
  • 1 small green bell pepper, chopped
  • 1 (16 ounce) can diced tomatoes, PARTIALLY drained
  • 1 large sweet onion, chopped
  • 4 slices cooked bacon, minced (NOTE the cooked bacon should be minced finely in a food processor)
  • 1/3 cup grated Romano or Parmesan cheese
  • 4 to 6 garlic cloves, minced
  • 1/2 teaspoon drtied Italian seasoning
  • 1/3 cup chopped fresh parsley (do not substitute dry)
  • 1 teaspoon beef bouillon powder
  • 2 eggs, lightly beaten
  • 1 teaspoon each salt and ground black pepper
  • 1 1/2 cups Italian breadcrumbs
  • Topping:
  • 1 cup ketchup
  • Garlic powder
  • Salt and pepper

How to Make

  • Step 1: Preheat oven to 375°F. In a large bowl, combine meatloaf ingredients adding breadcrumbs to mixture last. Using your hands mix well.

  • Step 2: Press meat into a meatloaf pan (the ones with the holes in the bottom to allow the fat to drain out). Brush top with ketchup then sprinkle with garlic powder, salt and pepper. Bake uncovered 1 1/2 hours. basting occasionally with additional ketchup during cooking.
