Step 1: In a large heavy skillet or non stick pan heat oil to medium, add pepper rings allowing to cook a few minutes, flip over
Step 2: Add an egg to each bell pepper ring (cracking the egg into a small bowl and gently pouring into the pepper ring makes this step easier) Season with salt and pepper. To prevent whites from leaking out from under the pepper ring lightly press down on rings with egg turner. It will help to contain the whites
Step 3: Cook to desired stage. For sunny side up cover with lid while firming up. For easy over gently flip over and cook about a minute more
Step 4: Great with toast, sliced tomatoes and condiments of your choice
