Ingredients

The ingredients are:
  • 1 whole fryer chicken, cut in pieces
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup pancake syrup (I like Mrs. Butterworth's)
  • Canola oil, enough to come up 1/2" in a large skillet

How to Make

  • Step 1: Preheat oven to 375 degrees F. Rinse chicken well and pat dry with paper towels. Put oil in large high-rimmed skillet and heat on medium high till, when you put the handle end of a wooden spoon into it, it sizzles around it.

  • Step 2: In large dish, mix flour with salt and pepper.

  • Step 3: In a separate dish, pour syrup. Have an extra plate to put chicken pieces on.

  • Step 4: Dip each piece of chicken in syrup and let most of it drip off. Then coat in flour mixture on both sides. Place on plate. Let set a minute. Then coat in flour again. Shake off excess flour.

  • Step 5: Carefully place each piece in hot oil and brown on each side. Watch closely, as it will brown very quickly. You may have to do chicken pieces in batches, depending how big your skillet is. Remove from hot oil when nicely browned and place on paper bag to drain a little. Then place in large baking dish or pan leaving a little room in between each piece.

  • Step 6: Place in preheated 375 degree F. oven and bake for 30 minutes uncovered.
