Ingredients

The ingredients are:
  • 1/4 pound cucumber (1/4 medium cucumber, cut into bite size pieces)
  • 5 green onions (thinly sliced)
  • Salt (pinch)
  • 1 tomato, diced
  • 1/2 tablespoon parley (snipped)
  • Cumin, to taste (I use 1/4 teaspoon)
  • Freshly ground pepper, to taste
  • 1 clove garlic, finely chopped
  • 1/2 cup fat-free yogurt (plain, I only use 1/4 cup)

How to Make

  • Step 1: Mix cucumber, green onion and salt; let stand 10 minutes.

  • Step 2: Add tomatoes, parsley, cumin, pepper and garlic.

  • Step 3: Cover and refrigerate for 1 hour.

  • Step 4: Just before serving, drain vegetables thoroughly in a colander.

  • Step 5: Add yogurt; mix well to combine.

  • Step 6: Serve.
