Step 1: Preheat oven to 350 degrees F. Slice the sandwich buns in half, spread cut sides thinly with mayonnaise, and place the bottoms in a 13" x 9" pan.
Step 2: Layer the chicken, ham, and cheeses on the roll bottoms; top with pickles. Top with the roll halves and set aside.
Step 3: In small saucepan, melt the butter over medium heat. Add onion and garlic; cook and stir for 3-4 minutes, then add the jalapeno and cook for 2 minutes longer.
Step 4: Remove from heat and stir in the brown sugar, mustard, and hot sauce until sauce combines. Spoon this mixture over the sandwiches, making sure to coat the tops of the buns completely. Sprinkle with Parmesan cheese.
Step 5: Bake for 20-30 minutes or until the tops of the buns are crisp and cheese is melted. Serve immediately.
