Ingredients

The ingredients are:
  • 1 (2 1/2 to 3 pound) chicken, cut up
  • Seasoned Flour:
  • 1 1/2 cup flour
  • 1 tablespoon garlic salt
  • 1 1/2 teaspoon pepper
  • 1 1/2 teaspoon paprika
  • 1/4 teaspoon poultry seasoning (or 1 Tbls onion powder)
  • Crispy Batter:
  • 2/3 cup flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 beaten egg yolk
  • 3/4 cup water
  • 1 cup Crisco

How to Make

  • Step 1: Seasoned Flour: Combine and set aside.

  • Step 2: Crispy Batter: Combine ingredients

  • Step 3: Heat Crisco to 365 degrees F. in large cast iron skillet. Make sure it does not come more than 1/2 way up the skillet,(so it doesn't run over and catch fire)or you might have to redecorate your kitchen!

  • Step 4: Moisten chicken pieces. Dip in seasoned flour, then batter, then back in seasoned flour. Fry for 15 to 18 minutes or until well browned. Do not crowd pieces. Do in separate batches if necessary. Drain on wire rack, not paper towels.
