Ingredients

The ingredients are:
  • 2/3 cup natural-style peanut butter, unsweetened (I used half crunchy and half creamy)
  • 4 tablespoons butter, softened or coconut oil
  • 1/2 to 3/4 cup Splenda brown sugar blend or 1-1 1/2 cups brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 large eggs
  • 1 cup old fashioned oats, ground in a blender or oat bran
  • 1 1/2 cups old fashioned oats
  • 1/2 to 3/4 cup semi-sweet chocolate chips or mini chocolate chips

How to Make

  • Step 1: Preheat oven to 350°F. Lightly grease 2 baking sheets or line with parchment paper.

  • Step 2: Cream the peanut butter, butter, sugar, vanilla, salt and baking soda in a medium bowl.

  • Step 3: Beat in the eggs, scraping the bowl once they're incorporated, then ground oats, old fashioned rolled oats and chocolate chips.

  • Step 4: Drop the dough by tablespoonfuls onto the prepared baking sheets. (They don't spread much.).

  • Step 5: Bake the cookies, reversing the pans midway through (top to bottom, bottom to top), until they're barely set and just beginning to brown around the edges, 8-12 minutes depending on the size and your oven. Don't over bake!

  • Step 6: Remove the cookies from the oven and let them cool completely on the pans.
