  • 1 1/2 teaspoons vegetable oil
  • 3/4 cup shredded sweetened coconut
  • 1 onion, finely chopped
  • 2 cups long grain rice
  • 4 cups chicken or vegetable broth
  • 1/4 teaspoon salt
  • 1 mango, peeled and chopped
  • 1/4 cup fresh coriander, chopped

How to Make

  • Step 4: Drain rice; stir in mango and coriander; serve
