Ingredients

The ingredients are:
  • 1 package (14 ounce) Won Ton wrappers (between 50 and 65 per package, round or square with corners trimmed), allowing two wrappers for each lasagna (and freeze the rest).
  • 1 pound lean ground beef, cooked and seasoned to taste
  • 1 to 1 1/2 cups marinara sauce (bottled or your own favorite recipe)
  • 1 to 1 1/2 cups mozzarella cheese, grated
  • 1/2 cup Parmesan, grated

How to Make

  • Step 1: Set out the ingredients so assembly will be quick. If the Won Tons are square, trim the corners or cut with a cookie cutter for more even baking. Ends that stick up will be overcooked.

  • Step 2: To assemble, spray muffin tins very lightly with vegetable or olive oil spray and drop a dime sized bit of Marinara in the bottom of each cup.

  • Step 3: Place one Won Ton in each cup, gently fitting it to the sides and bottom.

  • Step 4: Layer, in order, one tablespoon of cooked beef, one tablespoon of Mozzarella, and one tablespoon of Marinara.

  • Step 5: Repeat the layers, beginning with a second Won Ton and topping it with beef, Mozzarella, and Marinara. Top the whole muffin with 1/2 teaspoon of Parmesan.

  • Step 6: Bake at 375 degrees Fahrenheit for 7-8 minutes until the cheese is melted and the wrapper is golden but not brown.

  • Step 7: Cool slightly and remove from the pan. Serve hot or cool completely and refrigerate until ready to reheat. Depending on the number of muffins, reheat at 375 degrees Fahrenheit for 2-3 minutes.

  • Step 8: For a vegetarian version, saute a mixture of chopped onions, zucchini, and mushrooms with some oregano and basil and substitute the vegetables for the beef in the recipe above.

  • Step 9: To use the wrappers that are left over (fresh or frozen and thawed): fry them briefly and dust with cinnamon sugar or a salt and cajun spice mix, blind bake extra cups in a mini-muffin pan for appetizer quiches or to hold baked eggs, bake or fry strips to top a salad.
