Ingredients

The ingredients are:
  • 1 tablespoon coconut oil
  • 1/2 medium onion, chopped
  • 1/4 cup fresh ginger, chopped
  • 4 cups water
  • 2 cups carrots, chopped
  • 2 cups yams or sweet potato, peeled , chopped
  • 1 medium orange, peeled, chopped
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/2 cup apple juice

How to Make

  • Step 1: Heat the coconut oil in a large saucepan, add onions and saute until they are translucent about 5 minutes

  • Step 2: Add all the remaining ingredients, bring to boil, lower heat ans simmer until the vegetables are tender about 30 minutes

  • Step 3: If you wish you may puree the soup - we like it as is.
