Step 1: Heat oil in a large skillet over medium-high heat. Add in onion and saute for about 3 minutes or until softened. Add in garlic and saute for 1-2 minutes. Stir in all remaining ingredients; bring to a simmer over medium heat, then reduce to low and simmer uncovered for about 25-30 minutes.
Step 2: Remove from heat and allow to cool just slightly..
Step 3: Dip the chicken into the sauce and turn to coat. Place on a preheated grill for about 10-15 minutes, turning once during cooking (the chicken does not have to be fully cooked, it will finish cooking in the sauce).
Step 4: Transfer the chicken to the skillet and simmer in sauce until thoroughly cooked and tender, turning once during cooking (about 20 minutes).
