Step 1: Spread mustard on all eight slices, set aside.
Step 2: Hand shred pastrami.
Step 3: In a skillet melt butter on medium heat.
Step 4: Add shredded pastrami and warm up, mixing together so it is evenly heated about 5 minutes.
Step 5: Add Gryuere and fold into the pastrami stirring it until it melts about 4-5 minutes. Turn heat off.
Step 6: Divide mixture into four piles and place each pile on four slices of bread and make a sandwich. Serve immediately.
Step 7: Serve each sandwich with a 1/4 of pickle on the side.
