Ingredients

The ingredients are:
  • 3 tablespoons fresh lime juice
  • 1 1/2 pounds short ribs, cut into 3/4 inch cubes
  • 4 tablespoons yellow curry paste
  • 1 medium onion, chopped
  • 2 jalapeno peppers, seeds and membrane removed, finely chopped
  • 2 large cloves garlic, chopped
  • 1 19 ounce) can crushed tomatoes, with juice
  • 3 cups sweet potatoes, 1/4 inch bite size slices steamed until just tender
  • 3/4 cup fresh papaya, cut 1/2 inch dice
  • 3/4 cup fresh mango, cut into 1/2 inch dice
  • 4 tablespoons fine shredded unsweetened coconut

How to Make

  • Step 1: Rub the lime juice on the meat, place in a zip lock bag and add curry paste, coat all the pieces, set aside to rest for at least an hour

  • Step 2: Mix the mango and papaya together, place in a bowl, cover and place in the fridge

  • Step 3: Spray a large skillet with oil, brown the curried meat. Be careful not to burn the meat

  • Step 4: Add onions, jalapenos and garlic to the skillet, stir fry until the onions are just translucent

  • Step 5: Add tomtoes, cover with a lid and simmer for 45 minutes to an hour or until the meat is tender.

  • Step 6: Just a few minutes before serving add the tender cooked sweet potato slices

  • Step 7: Seerve over rice or noodles, top with fruit and coconut Enjoy
