Ingredients

The ingredients are:
  • 1 pound ground chicken (or ground turkey)
  • 2 extra large fresh mushrooms (1 cup, sliced mushrooms)
  • 1/2 cup yellow onion, chopped
  • 3 tablespoons fresh garlic, chopped
  • 1 large jalapeno pepper, chopped
  • 2 medium tomatoes, chopped
  • 1 cup bell peppers, thin sliced (mixed coloured sweet peppers, thinly sliced)
  • 5 tablespoons salsa (hot, medium, mild your choice)
  • 1/2 cup fresh cilantro, chopped
  • 2 teaspoons Cajun spice
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

How to Make

  • Step 1: Heat a wok or large skillet, high medium heat, lightly spray with oil, add chicken and saute until lightly browned, 3 minutes

  • Step 2: Add mushrooms, onion, garlic and jalapeno pepper mix well and continue cooking over medium heat for about 8 - 10 minutes

  • Step 3: Add tomatoes, mix and continue cooking for about a minute or two

  • Step 4: Add sweet peppers, salsa, cilantro, cajun spice, oregano, season with salt and pepper Continue cooking for about another 3 minutes. Serve and I hope enjoy
